I love this cookbook. It has a Canadian flare to it and fit in with familiar foods and pantry items on hand but with beans incorporated. I made Greek Salad with Chickpeas & Bow-Ties twice, the second time a double recipe as it keeps well and my teens love it for lunch. Lemon juice and fresh herbs gave it zing. My daughter and I had a craving for chocolate so, on a whim, we looked up chocolate in the index and selected the Chocolate Cupcakes. We had a lot of fun hiding beans in a dessert. No one could guess the secret ingredient! They were somewhat dense (not surprising as there was a cup of puréed lentils in there) but were moist and had good flavour. Very satisfying and filling. We had actually wanted brownies, so were surprised later to find there IS a brownie recipe here but not indexed under chocolate! Oh well, more things to try for next time. I’ve recommended this book to others including my nutritionist.
